I bet many of your mornings consist of sprinting out the door to get to class or work on time. Before you head out the door on an empty stomach (or with a super sugary breakfast), I’m going to share 5 healthy breakfast ideas that you can prepare quickly and either enjoy at the table or while running out the door.
1. Avocado and Banana Overnight Oats
Overnight oats are a popular breakfast item many fit foodies are obsessed with. Why? Because it’s so darn good. Creamy consistency + your favorite toppings makes this one of my top complete breakfast. Check this recipe out!
2. Breakfast Parfait
Parfaits are a sweet favorite of mine. Have leftover quinoa? Put it to use and assemble a delicious breakfast parfait in a matter of minutes. Layer it with Greek yogurt, almonds, chia seeds, and your favorite fruits. I also love the combo of cottage cheese, blueberries, pineapples, and granola and nuts.
3. Warm and Nutty Cinnamon Breakfast Quinoa
Bring on the protein and fiber power with more quinoa. Quinoa is an awesome substitute for brown rice or oatmeal. Cook the quinoa for about 2-3 minutes in any milk you prefer. Add some cinnamon and sweetener, to taste. Scoop it into a container, toss in some fresh fruit, dried berries, or nuts, and voila! Easy and delicious

5. Sweet Potato and Black Bean Breakfast Burrito
Get your dosage of proteins, veggies, and fats. Chopped medium bell pepper, chopped red onion, 3 large whole eggs, shredded cheese, whole wheat tortillas, black beans, and chopped sweet potato. Feel free to make a bunch and roll them up, wrap them up in foil, and throw it into the freezer.
