Mix things up with savory oats, instead of sweet.
As a veg-head, I need all the sources of iron I can get, and luckily oats provide that. These oats work for breakfast OR dinner, for real.
Pairing oats with a bunch of veggies, flavorful protein, and copious seasoning is what did the trick for me. This recipe is college-budget friendly and can be made vegan, gluten free, or completely full of gluten and meat if you’re into that.
Time: 15 minutes
When to eat it: For breakfast, lunch, dinner, when “insatiably hungry” doesn’t even begin to describe your feelings
Perks: Good source of iron and protein and a good “throw it all together” kind of meal
Sh•t you need:
1 cup of rolled oats (steel cut works too)
1 pinch of salt and pepper
1 pinch of garlic powder
1 sausage (veggie or the real dea)
1 cup of spinach
1/4 a cup of white onion
1/2 a pepper
Some sriracha (if you like it hot :P)
1. Add a cup of boiling water to your oats and let that sit on the side. 2. In a skillet, add the sausage, onion, spinach, and pepper and sauté 3. Once the oats have absorbed all the water, add seasoning and stir. 4. Add the contents of the skillet to the oats and top with sriracha 5. If you wanna get a little crazy, add an over-easy egg to the top and let that yolk get messay 6. ENJOY!
