Easter has always been one of my top three favorite holidays (for a few different reasons). Now that my family (sadly!) no longer organizes an egg hunt for me and my cousins, the reasons have evolved pretty drastically, but the holiday is still one of the best!
The first reason I love it is because it marks the end of the Lent season, so if I gave up something I love, I can once again indulge.
The second reason? One word:
BRUNCH.
Every year on Easter, my mom’s side of the family congregates early in the morning and cooks up a wonderful display of waffles, eggs, bacon, Grammy’s famous pancakes, fruits, bagels, mimosas, and more.
As a kid, I was all too happy to shovel forkfuls of limitless brunch food into my mouth after a long morning of egg hunting; now, however, things have changed somewhat. I generally keep to a certain diet, and don’t really enjoy feeling stuffed to the brim. So I’ve had to tailor Easter brunch experience to my needs.
