A flavorful, meal-worthy salad in less than 15 minutes.
Time: 10-15 minutes
When to eat it: Lunch, dinner
Perks: Gluten-free, vegan, high-protein, high-fiber
Sh*t You Need:
2 handfuls chopped kale
1 cup quinoa, cooked
1 handful walnuts
1 handful cranberries
1 chopped apple
2 tbsp balsamic dressing (or learn to make your own here)

The Recipe:
1. Cook quinoa on the stovetop (1 cup quinoa with 2 cups water) and let simmer for 10-15 minutes or until the quinoa absorbs the water. 2. Wash and chop up kale (or grab two handfuls chopped kale from pre-washed and chopped package) and place in bowl. 3. Add cooked quinoa over the kale. Cut apple into bite size pieces and then add to bowl. 4. Add in walnuts, cranberries, and dressing. Mix thoroughly & enjoy!
