Oatmeal isn’t just for breakfast anymore.
If you love oatmeal as much as I do, you will love these savory oats. Oats are filled with fiber to keep you feeling full for longer, as well as healthy minerals that are good for your digestive system. With such great health benefits, why limit them to just breakfast?
Time: 15 minutes
When to eat it: Breakfast, lunch, dinner
Perks: Low cost, high fiber, vegetarian
Serves: 1
Sh*t You Need:
1/2 cup rolled oats
1 clove garlic, grated or minced
1 T olive oil
1 egg
1/2 Avocado, sliced
1/4 c goat cheese
Kale
Cherry tomatoes
Red pepper flakes
Sea salt
Black pepper
Stovetop
Skillet
Small pot
The Recipe:
1. Cook 1/2 cup rolled oats as package directs. 2. In another pan saute a handful of kale and a handle full of cherry tomatoes with grated garlic, sea salt, and olive oil. 3. In a small pot, poach one egg for about 4 mins. 4. When these three steps are done it’s time to bring it all together. Place cooked oats in a bowl. Top with cooked kale and tomatoes, the poached egg, and chopped avocado. Finally, sprinkle bowl with crumbled goat cheese, red pepper flakes, and salt/pepper.
