Finally, a healthy SWOON-worthy breakfast you can make in your dorm.
Man oh man I wished I created this recipe when I was still living the dorm life. You know how much more content I would be if I had more than two options for breakfast? Ugh, better late than never I guess.
For those of you who do/have lived in college dorms before, you probably understand the struggle of the dining hall. Because of practice, I missed breakfast everyday so I had to fend for myself (aka oatmeal for life). I don’t mean to downplay oatmeal, but having the same breakfast everyday for a long time gets boring after a while.
I’m also aware of the fact that mini fridges don’t hold a lot of baking ingredients in them, so this pizza crust is made with only 3 simple ingredients.
It’s totally versatile too. Feeling fruity? Add mashed banana when making the crust. Craving all things fall? Sub in pumpkin. Want to hide some veggies in there? Mix in shredded zucchini or carrots.
Time: 5 minutes
When to eat it: for a quick breakfast

Serves: 1
Sh*t You Need:
1 ripe banana, mashed OR 1/2 cup canned pumpkin OR 1/2 cup shredded zucchini OR 1/2 cup shredded carrots
1 egg, beaten (sub flax or chia egg for vegan option)
2 Tbsp. coconut flour
Vanilla (optional)
Cinnamon (optional)
Sweetener (optional)
Any toppings you like!
Topping ideas: nut butter/yogurt/coconut cream,sliced fruit, chopped nuts, seeds, and/or chocolate
Microwave
Small bowl
Plate or parchment paper
The Recipe:
1. Combine all ingredients in a bowl. 2. Place a piece of parchment paper over a large plate. Spoon batter on to resemble a crust. 3. Place in microwave and let cook for about 2-3 minutes (depending on power of microwave). Let cool. 4. Spread on nut butter/yogurt and add your toppings. Enjoy!
